My last attempt to make a Kroger brisket (I did sous vide) ended up tasting mostly like pepper. Recipe called for a heavy coarse coating, but apparently I overdid it.

I actually made an instant-pot brisket the other day and it came out fantastic in like 2 hours of cook time instead of 5 or 7+

Nice, keep us updated. Is that a lot of paprika/cayenne? Since you have a tape measure in the background, what are the dimensions of this brisket?

I usually throw a cut like this in the crock pot and make shredded carne . Makes terrific tacos and burritos and pulled beef sandwiches.

I had a similar experience Thursday. Threw a Costco cut on the smoker. Nothing against the meat, but somehow got very little smoke flavor in, and almost no telltale red ring in the meat. But yeah, smoke brisket tacos, steak and eggs, still worthwhile.

IS what I made and is delicious, but the recipe as is is kinda wonky and definitely can’t be done in the time she says - increase cook time to 1.5 hours minimum with .5 hour natural release. Total time including prep and stuff is closer to 3 hours.
Also highly recommend America’s Test Kitchen instant pot cookbook, they have a brisket recipe, but they’re not online for free unfortunately.

2 hours in the BBQ with some smoke as low as possible (~ 250F) . Then take it inside, wrap it in foil, and toss it in a 300 F oven for another 3.5 hours to steam in it’s own juices.
It’s ‘cheating’ with the oven and foil, but it comes out fucking delicious.
